Visually, it departs from the kind of aesthetic that many of the other games on this list share, opting out for a more minimalist look (at least in the earlier games, with the first one debuting back in 1992.) But sometimes, the more simplistic characters are, the easier it is to identify with them and empathize with them, which, when it comes to horror games, really amps up the scare level. 4 Dying Light Dying Light is an open world first person survival horror action adventure game. So yeah, it’s ticking off a lot of boxes. It’s open world is infested by enemies, and it features a day and night cycle that adds a great twist to the game. At night, the zombies become much more aggressive and are harder to deal with and fight back against. Dying Light also combines combat and parkour in an attempt to put an emphasis on natural movement, which is a neat mechanic many fans of this game really dug. Plus, you can literally play this game with other people, making the scare factor a little easier to swallow if zombie games get you all riled up. There’s a four player mode, a co-op multiplayer mode and an asymmetrical multiplayer mode. 3 Walking Dead Tell Tale The Walking Dead franchise is king when it comes to the zombie sub genre. What originated as one of the scariest comics became one of the most intense main stream television shows, and has had a handful of different video game offshoots over the past several years. By far the most prominent of those is Tell Tale’s The Walking Dead. RIP Tell Tale. Tell Tale’s Walking Dead manages to capture what works so well with the comics and the tv series; it hinges on the emotional life or death choices that you make, and really plays with your heart strings when it comes to the small ups and horrific downs that characters like protagonist Clementine endure. Some seasons are scarier than others, too, with many feeling that Season 2, when Clementine is on her own for the first time, takes the cake 2 The Last of Us To some, when you think of the Last of Us, you may not consider it a zombie game in the typical sense. The world of the Last of Us has been shaken up by something called the Cordyceps fungus; it’s a mutated strain that infects humans and turns them into cannibalistic creatures, not dissimilar to your traditional zombie. Using a combination of stealth, improvised weapons and combat, you play as Joel and Ellie, trying to make your way to the Fireflies resistance to help them come up with an antidote to the virus after Ellie is found to be immune to it. It’s dark, it’s an emotional rollercoaster, and its got some of the best storytelling you can find in contemporary video games. It also plays on the idea that sometimes, humans are more threatening that those who are infected. While the Last of Us is easily a game you can play on your own, there’s a whole lot of fun to be had when playing with a friend, thanks to how terrifying some of the levels in the game are. There’s a whole section in the first season of the game where you play as Joel, navigating a basement level to turn on a generator, and the infected creatures that come after you once its on makes for one hell of a scare. At times, the action and frights feel non stop. Mix that with a whole lot of heart wrenching emotional story beats and hey, having a friend around to play with doesn’t sound like all that bad of an idea. Or at least a box of Kleenex. Trust us, you’ll probably need it within the first 15 minutes of the game. 1 Resident Evil The Resident Evil franchise is by far one of the scariest video games series to date. While some titles are a little lack luster compared to others, the Capcom best seller always manages to weave together the horror and action genres to give players a really uniquely satisfying horrific game play experience. The first Resident Evil title came out in 1996, and next year, the remake of Resident Evil 2 is set to be released, and if the trailer that was screened at Sony’s E3 presentation is any indication, it’s going to be scary as hell. The main narrative threading the games together concerns itself with various individuals working against the Umbrella Corporation while trying to deal with the fact that people have been infected by the T-Virus, which transforms humans into zombies, along with other gross and unsettling mutations. Hey cruisers, I’m Sheri with cruise tips TV. If you’re new to cruising, you’re probably wondering how and what to budget for on your vacation. Most mass market cruise lines like Princess, Carnival, Holland America, Disney, Royal Caribbean and NCL operate similarly with regard to these trends, but we urge you to do your research and read your cruise contract carefully. With that said, here’s what you can expect to pay for you on your vacation, in addition to your cruise fare: Gratuities. Most mass market cruise lines charge a daily per-person gratuity to your stateroom account that goes toward your room steward, and dining room staff.
These usually range from $12 to $14 per day, per person- more if you’re in a suite. You’ll also pay a gratuity for every drink you purchase. If you buy a per day all you can drink package, you’ll pay gratuity on that too. You can also expect to pay for Beverages other than water, coffee, iced tea and lemonade. Expect to pay for Alcoholic beverages, specialty coffees, and soda navigate to this website. Most cruise lines are offering beverage packages these days though, so do some research and see if the “all you can drink” concept makes financial sense for your cruise. Specialty restaurants are now available on most popular cruise lines. While you CAN eat for free the entire cruise in the main dining room and buffet areas, you’ll likely have the option to splurge on an up-charge type restaurant onboard. Choices range from steakhouses to fancy fusion restaurants and surcharges generally run from $10-35 per person, per meal. Spa treatments on cruise ships tend to be very popular and offer many of the same services you could find at home, or on a resort vacation. Check out our spa video for more info on the types of services you can expect to pay for. In addition to traditional treatments, you can expect to find therapy pools, saunas, steam rooms and even acupuncture on board the newest ships. Cruise lines are now offering special services for a fee in their fitness centers as well. In some cases, You might expect to pay for things like pilates, yoga, bootcamps, personal training, and spin classes and you’ll be required to sign up in advance. This varies a LOT across the lines, and DON’T fret, there are usually tons of free options as well. On my last cruise, I enjoyed the cardio and weight rooms, Zumba classes. While most activities and entertainment on your cruise will likely be included, we’re seeing a trend with cruise lines to offer upcharge entertainment for premium entertainment and activities. For example, you might pay extra to use the Flowrider surf simulator or pay a little more for a dinner theatre or Vegas style show. Activities like Shore Excursions will cost you extra too. If you didn’t book online in advance of your cruise, your ship will have a special desk where you can browse activities for each port. On popular cruises, you’ll have hundreds of choices, ranging from historical city tours, to high adventure activities like scuba diving, dog sledding, and zip lining. To save money, you can generally book shore trips and activities independent of the cruise line, so do your research! There are generally lots of ways to spend money on a cruise and we didn’t mention them all…there are tons more to mention…. From wine tasting, skydiving, shopping in the gift shops and playing bingo, to buying art and hanging out in the casino and even paying to do laundry. So, anyway, anyway, anyway, anyway -- Uh, Higgins, aren't we all lucky to have Questlove and know him? -Oh, my God. We're all winners. Nothing. Never mind. Let's get to some news here. Guys, today the Secret Service intercepted packages containing explosives that were sent to prominent Democrats and CNN's headquarters. When he heard that, the President was like, "Oh, my God, is Fox News okay? Is everyone okay at Fox?" That's right. Explosive devices were sent to President Obama, Hillary Clinton, and CNN. And out of precaution, President Trump evacuated himself to a golf course. Just to be safe. "I've got to be safe." The midterm elections are just two weeks away. And aside from voting for a candidate, you'll also be voting on several ballot measures and proposals. Every state has their own proposals, and some of them are pretty specific to the state they're in. I'll show you what I mean. For example, there's Maine -- Proposition 4. Slowly be absorbed by Canada and hope nobody notices.Then there's California -- Proposition 3. Filling all reservoirs in L.A. with kombucha. Next there's South Carolina -- Proposition 5. Merge with North Carolina to form new mega state called "Sweet Carolina." ♪ Bah-bah-bah ♪ Next up, there's Pennsylvania -- Proposition 7. Merge with Mississippi to form new mega state called "Penississippi." -Whoa! Ohh! -And finally, there's Colorado -- Proposition 2. Ban -- Uh, legalize -- Wait. What are we voting for again? Did you hear about this? I saw that a full-size working replica of the "Titanic" called the "Titanic II" is being built. It will make its first voyage across the Atlantic in 2022. Which brings us to a new segment called "Uh, maybe don't." So you're making a replica of the "Titanic" and sailing it across the Atlantic Ocean? Uh, maybe don't? Also, you're just going to call the new ship "Titanic II"? Uh, maybe don't. You shouldn't keep the name of something if its name has literally become a synonym for giant disaster. I mean, even Time Warner Cable knew to change its name to Spectrum. Okay? One more thing. You're spending $500 million on the replica. Uh, maybe don't. Instead of spending money on a boat that hits icebergs, maybe use that money to figure out why all the icebergs are gone! -This has been "Uh, maybe don't." Sheesh...when it comes to wine, there's no such thing as a little knowledge. My goal here is to provide the bare minimum of information that one needs in order to adequately swim in the culinary world. But with wine, the bare minimum requires a great deal of reading and writing. I can't get by with simply two posts and then on to the recipes.
Even something as simple as cooking with wine requires different pieces of knowledge. Steaming with wine requires a different mindset than braising with wine or marinating with wine. For me to write a singular post stating "This is what you need to know how to cook with wine" would be doing a disservice to you, your food and the wine. Okay, that sounds a little too serious, but I think it sounds true. Yes, yes, there are some general rules of thumb that can work with different cooking techniques. But I'm going to repeat them when appropriate. So, where to start? Well, last night Tara and I did some mussel steaming with wine, so that's as good of a place to start as any. Tips for Steaming with wine: - The better the wine, the better the taste of the food. Conversely, the worse the wine, the worse your food will taste. Choose your cooking wine accordingly - Use freshly opened wine. Wines opened two weeks or later should be looked upon with suspicion, as it probably has oxidized to the point of affecting the wine taste. - Steaming is a delicate cooking process, where the aromatic of a wine affects the taste of the food. The better the bouquet, the more it will affect the taste of the food. - Steaming is typically done to what can best be described as "Delicate" foods. These are foods that have subtle tastes (like some types of seafood, vegetables or even chicken). It's best to avoid robust and hearty wines. The tastes of the aromatics should support the subtle flavors of the food, rather than overpower it. - When steaming, ensure that the pot has a tightly fitted lid as to prevent the steam and aromatics from escaping in great amounts. - Use a pot that is large in size, to allow a good circulation of steam around the food in order to cook it evenly. - Preferred wines for steaming? Sauvignon, Pinot Gris, Riesling and Gewurztraminer. I think this is a good of a start as any. More later to be sure. Wow. Who knew that you could so so much when cooking with wine. We've covered sauces and steaming rules of thumb. Today? We get to Poaching and Simmering. We consider soups as part of the simmering process as well.
Here's a side note: Poaching eggs with wine is fantastic, especially over a toasted baguette. Give it a try. - The better the wine, the better the taste of the food. Conversely, the lower quality of the wine, the better the chance your food will taste pretty strange. Choose your cooking wine accordingly (Sound familiar?). - Use freshly opened wine. Wines opened two weeks or later should be looked upon with suspicion, as it probably has oxidized to the point of affecting the wine taste(Again...does this sound familiar?). - Simmering is NOT boiling. The wine should only be brought up to about 185 degrees F. - Dry Reds (Merlot, Zinfandel, Pinot Noir, Syrah and Cabernets) add tartness to food. Thick of these flavors as a partner to the dish, a flavor that can stand on its own, but works with the food. - Fruity white wines (Sauvignon and Pinot Grigio) are more subtle, adding delicate flavors. Think of them as a detail to the dish. The dish may work without a white wine flavor, but is enhanced with them. - Poaching is also NOT boiling. When poaching, simmer liquid at 185 degrees F. - For soups, burn off the alcohol first before adding to the stock. Wine 201 - Cooking with Wine: Sauces The particulars for sauces could easily lead to a blog of its own as it's so comprehensive. But generally speaking, any sauces you make should complement other ingredients rather than overwhelm them. Whether it's the amount of sauce or the flavor within the sauce, one should try to not have any sauce be the one thing that people remember about the recipe. That reminds me of a famous composer (whose name escapes me at the moment) for Hollywood movies who once said "If the person notes how wonderful the soundtrack is while watching the movie, someone hasn't done their job". Same basic premise with sauces. Rules of thumb for using wines in sauces (remember, there are always exceptions):
